Victorian chic in a Western saloon
This menu was chosen by the clients to reflect their desire for a menu both elegant and rustic.  The event was held at Eaves Movie Ranch, a traditional Western movie set.  Dinner was served in the ballroom and styled with luxurious red satin linens, decadent roses, and sleek black chairs, creating a bordello-like atmosphere.  After dinner, guests strolled across the dusty street to the saloon for a rockin' band and mojitos.  It was, no doubt, a sexy & stylish wedding.

Served with a basket of homemade green chile brioche and baguette and butter

Main Course...
Roasted Chicken Breasts stuffed with local chevre and herbs served with warm heirloom tomato salad and Yukon gold potatoes

Red Chile Calabacitas Enchiladas with cotija and crema mexicana

Grilled Hanger Steak with truffled pommes frite (parsley, parmesan, & truffle oil) and haricot verte
